Olive oil category: Premium certified P.D.O. extra virgin, acidity 0.5% or below, high polyphenol content: total polyphenols 315mg/kg, hydroxytyrosol and derivatives, 6.3mg/20g. Note: polyphenol counts and acidity levels may vary slightly between harvests.
Organoleptic profile: Harmonious and elegant, medium fruity, richly aromatic, medium pungency, slightly bitter, peppery aftertaste.
